Zucchini Pizza

Prep Time: 5 min
Cook Time: 30 min
Servings: 4 (one serving is both halves of one zucchini)

Ingredients
4 small zucchini
1/4 cup raw mozzarella
olive oil
1/2 tsp crushed garlic
sea salt and pepper to taste
1/4 teaspoon parsley or basil or both
2 small Roma tomatoes
1/2 teaspoon homemade Ezekiel bread crumbs

Directions
Preheat oven to 350 degrees.
Cut the zucchini in half lengthwise, and scoop out the center where the seeds are with a spoon. Brush the surface of each zucchini half with a mixture of crushed garlic, olive oil, salt, and pepper.
Arrange sliced tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes.
Remove and place diced or shredded mozzarella in between the tomatoes, place them back in, but now under the broiler till golden and bubbling. Remove and sprinkle with parsley, basil, or both. You will love this as a side dish OR a meal!

Peanut Butter Protein Pancakes

Prep Time: 8 min
Cook Time: 15 min
Servings: 6

Ingredients
12 organic eggs
12 tablespoons organic coconut flour
12 tablespoons coconut milk
2 tablespoons cinnamon
6 tablespoons 100% raw organic peanut butter
100% organic coconut oil (for cooking)

Directions
Mix the eggs, coconut milk, and peanut butter all together. Then add the cinnamon as well as the coconut flour. If you want (optional) you could add 1 tablespoon of vanilla extract. Make sure to mix very well.
Turn the stove on to medium heat. Add a little coconut oil to the pan. Using 1/4 cup, make 3 pancakes and cook for about 1 minute each side. Make sure you always put coconut oil in between batches, so that they don’t burn and they cook well.

Easy & Delicious Chocolate Cake

Prep Time: 10 min
Cook Time: 20 min or so
Servings: 15

Ingredients
5 ripe bananas
6 eggs
1 tablespoon vanilla
4-5 tablespoons honey
1/3 cup butter or coconut oil (melted and cooled)
1/2 cup coconut flour (sifted)
3/4 cup raw peanut butter
2/3 cup cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder

Directions
Preheat oven to 325 degrees.
Mash up the bananas.
Mix all wet ingredients together make sure that the coconut oil or butter isn’t hot when adding to the rest of the wet ingredients..it will start cooking the eggs. Mix dry ingredients together using a spatula at first. When the cocoa powder is completely mixed, you can finish with a beater for a couple of minutes. Add ingredients together and mix well.
Bake for about 20 minutes or until you put a toothpick in the middle and it comes out clean.
